This release is the sole Apera (Australian Sherry) only whisky that I had laid down for maturation.
It is the result of a marriage between two 100L Apera Casks.
After disgorging, and letting them blend for some time, half was taken from their vat and then re-filled back into one of the original Apera casks to continue its maturation, totalling 5 years of age.
The final result showcases a Whisky that is well balanced with the spirit versus cask driven attributes.
As with all of my whiskies, it is another high strength bottling showcasing rich flavours, depth and complexities.
I recommend allowing this whisky to warm and breathe in the glass a little longer before indulging in its flavours.
Nose: Fruitcake, orange and boiled lollies.
Palate: Bold sweet sherry notes pop firstly which is quickly met with ‘Christmas like’ spices.
Finish: Dried fruit and raisins continue. Some vanilla custard with a lengthy end.

It has been our experience that they showcase their profiles, aromas and drink best around and above room temperature (between 18-23°C).
