The dream to produce whisky was realised after touring Scotland, Japan and Tasmania’s whisky scene and seeing the possibility of creating a future in our local Whisky industry.
The start had it’s hiccups. Almost 18 months was lost in trying to get distillery building approvals for our intended location.
Sadly this did not eventuate and we sought alternate means to produce after losing some traction.
The opportunity arose to utilise the facilities of other SA distilleries (working around their schedules) to produce and create our very own spirits our way and kickstart our journey.
Uniquely, we obtained our own manufacturing production licence to make our own spirit whilst utilising other distillery premises and equipment.
To date Woodwater has been completely ‘hands on’ during every part of the production process.
We mill our chosen grain, hand stir our mashes, ferment in wooden wash backs, and double distill all our fine spirit. We make our own spirit and do not use or bottle anyone else’s produced spirit.
It has been a wonderful start in our journey and an absolute privilege to have had the opportunity to produce from the distillery sites of McLaren Vale Distillery and the former Rochfort Distillery, in South Australia.
Whilst utilising other facilities to produce our spirit, Woodwater Single Malt Whisky is always hand crafted from start to finish by us alone.
